Best rule of thumb is to stick to one of each type of GRF (i.e. don't have two sets of trains) unless they're specifically designed to work together or you're sure of what you're doing. Also just switching to FIRS + Iron Horse is a big step up from the vanilla game, I suggest that it's best not to add too much at once.
